When running a commercial kitchen there is a standard to which you need to keep your kitchen held to, so that you avoid hazards, including dangers to the general public and your employees. So a company was set up dedicated to upholding kitchen standards and protecting the general public, they decided to make this easier by providing a book with guidelines to be followed to regulate these standards, this book is known as the TR19. TR19 regulations are the guidelines that govern good practice for the cleaning of ventilation ducts and commercial areas prone to a build-up of grease.
What is BESA
TR19 is a standard that was defined by BESA (Building Engineering Services Association) as a way to standardise duct and kitchen extract cleaning systems. Developed in 1988, it has become the most recognised cleaning standard by insurance companies and service engineering companies alike. TR19 is a globally recognised cleaning standard.
Since the Introduction of TR19, it is now a requirement from the vast majority of business insurers for a TR19 certificate to be provided in order to demonstrate that your kitchen has been cleaned to this standard and therefore poses a lower level of risk. The TR19 certificate also enables you as a company to mitigate some element of your own risk, in the event of a fire the TR19 certification can potentially prove that the fire has not been caused as a result of a badly kept facility and is therefore down to human error as a pose to your negligence.
